摘要
随着经济的快速发展,社会对现代高级烹饪人才的需求也逐年递增,全国开设烹饪与营养教育专业的高校也快速增加。在应用型本科教育的推广背景下,高等学校"烹饪原料学"作为烹饪与营养教育专业的主干课是课程改革的一个重要组成部分。通过讨论烹饪与营养教育专业学生学习"烹饪原料学"的现状,教学方式的改善和教学方法的创新方面等对高校烹饪原料学教育教学有针对性地探讨,以期为应用型本科教育中"烹饪原料学"的教学提供新的思路。
With the development of economic, the demand of modern high-level cooking talent is increasing year by year, and the universities set up cooking and nutrition education through the countryalso increased rapidly. Under the background of the promotion of applied undergraduate education, the higher education Cooking Materials Ccourse as the main course of cooking and nutrition education is an important part of curriculum reform. This paper mainly discussed the status quo of Cooking Materials Course studied by cooking and nutrition education students, the improvement of teaching methods and the innovation of teaching methods etc.. In order to provide new ideas for undergraduate education cooking materials course education and teaching.
