摘要
《烹饪原料学》是烹饪专业的重要专业课程,本文针对当前该课程教学中存在的教学内容过多、教学方法单调、考核方法不科学等问题,提出在教学内容、教学方法、考核手段等方面的改革建议。
Cooking Ingredients is a crucial course for the students of cuisine,and the problems in its teaching include redundant teaching contents,monotonous teaching method and incomprehensive evaluation.This paper addresses these problems respectively.
