摘要
目前国内外研究表明,菜籽蛋白通过适当蛋白酶水解或经一定化学改性可得到大量具有生物活性和功能特性肽类,主要为抗氧化肽、降血压肽等;这些活性肽发现为今后充分利用菜籽蛋白资源提供新的途径。
Some researches have been showed that peptides with biological activity or functional property could be obtained after rapeseed protein hydrozyled by enzymes or chemical reagents, such as antioxidant peptides, antihypertensive peptides and so on. These bioactive peptides could provide a new approach to utilize rapeseed protein adequately.
