摘要
通过响应曲面法 ,确定以含水乙醇洗涤法制备双低菜籽浓缩蛋白的最佳工艺参数为 :选用浓度为70 %的乙醇做溶剂 ,控制液固比为 8.85∶1,在 6 0℃温度搅拌下 ,洗涤次数为 6次 ,洗涤时间为 2 0min/次。该工艺条件下制备的菜籽浓缩蛋白 ,其色浅味淡 ,无溶剂残留。蛋白质含量可达 6 2 .4 8% ,其中硫甙能够完全脱除 ,植酸含量下降了 6 0 %。研究并对菜籽浓缩蛋白的溶解性、吸水性、吸油性、乳化性和起泡性等功能特性及功能特性的改善进行了研究。
The extraction condition for preparing concentrated protein from defatted double-low rapeseed was obtained with Response Surface Methodology as follows:using 70% alcohol/water solution as the solvent,extracting at 60℃,with ratio of liquid to solid as 8.85∶1,washing for six times and for 20 min eachtime,By this way, the produced rapeseed protein reached 62.48% in protein content and was light in color,bland in taste. In the product,glucosinolation was totally taken off and phytic acid descended by 60%. Its solubility ,water absorption,oil absorption,emulsifiability and foamability were studied.
