摘要 该研究以双低菜籽为原料,乙醇溶液为溶剂,在超声波辅助下萃取制备双低菜籽浓缩蛋白;由单因子实验确定最佳工艺参数为:超声频率20DHz,超声功率100 KW,乙醇溶液浓度70%, 液固比3.5:1,萃取3次,每次20 min,得到浓缩蛋白产品蛋白含量大于60%,氨基酸平衡;硫甙、植酸、单宁等杂质去除85%以上。 Preparation of protein concentrates assisted by ultrasound from Canola seed are studied. After investigating the single effect factor on protein preparation, the optimum factors were as follows:the concentration of ethanol 70%, the rate of solution to solid 3.5 to 1, pH3.5, and extracting three times, with 20min each, under 100kw ultrasound power, The result showed that protein contents are above 60% and contain a balanced amino acids profile, impurities such as phytic acid, glucosinolate content and tannin are removed more rather 85%.
