摘要
食用天然色素是色素发展的方向。它主要从自然界各种动植物中提取,其中很多品种,均具有生理活性,且安全无毒,是国际上竞相开发的重点。该文论述了几种具有保健功能的食用天然色素:番茄红素、姜黄色素、β-胡萝卜素、虾青素。并从食用天然色素的研究现状,安全性思考以及发展趋势等方面对我国天然食用色素进行了阐述。
Natural pigment is the direction of pigment development in food industry.Natural food pigment is mainly extracted from the plant.Many of them have physiological activities.Natural food pigment is even more safe than synthetic dyestuff so that it becomes the important additive development emphasis in the world.The paper discussed some kinds of functional natural pigments such as lycopene,curcumin,β-carotin and astaxanthin,and described their research status,safety and development.
