摘要
分析了现代乳品生产状况及存在问题,概述了嗜酸乳杆菌生物学特性、生理功能以及在乳品工业上的应用及发展趋势。
L. acidopholus is one of probiotics which are researched and developed in the Lactic acid bacterium at present. As the third generation fermented lactic cultures, it is an important microorganism in gut. The biology character, the physiology function and the application in the milk industry were introduced in this paper.
