摘要
目的:优化紫甘蓝色素提取工艺,测定色素的抗氧化能力。方法:以紫甘蓝为原料,在单因素实验基础上,利用正交设计超声波辅助优化紫甘蓝色素的最佳提取工艺条件,利用DPPH法来检测其抗氧化能力。结果:超声波辅助紫甘蓝色素最佳提取工艺条件是:浸提液pH为1,液固比为25:1(mL,g),温度在50℃,时间为50min,清除DPPH·能力,最高可达95%。结论:利用最佳工艺提取到色素,色素具有良好的抗氧化能力。
Objective:It was to research optimization of extraction technology for purple cabbage pigment and antioxidant activity.Method:On the condition of single factor experiment,the ultrasonic-assisted extraction technology was optimized with orthogonal experiment design,and antioxidant activity was investigated by scavenging capacity DPPH·.Result:The optimal extraction technology for purple cabbage pigment was ratio 25:1(mL,g),pH 1,50 min and 50℃,scavenging capacity to DPPH· could be up to 95%.Conclusion:The optimal extraction technology suit to extract pigment from purple cabbage,and the pigment has strong antioxidant ability.
