摘要
基础理论课与技能实践课结合是高职烹饪专业教学中一个不容忽视的问题。本文通过作者对毕业生充分调研及多年教学实践,以烹饪基础化学课为例,对这一问题进行了初步探讨,以期能对高职烹饪教学的完善和发展有所助益。
The combination of the basic theoretical courses and practice in skill is a problem needed to be solved presently. In terms of the investigation to the graduates and you of teaching and practice, taking the in^tory chemistry course for cooking as an example, the problem mentioned above is dealt with seeking to be helpful for the perfection and development of the instruction of advanced course for cooking.
