摘要 沙门氏菌作为引起食源性疾病的重要致病菌,在猪肉及猪肉制品中的污染率很高,因此肉类产品的质量安全成为社会关注的重大问题。快速准确地检测食物中的沙门氏菌是防止和控制沙门氏菌传播的重要手段。综述了沙门氏菌对猪肉的污染途径及沙门氏菌的几种检测方法,以引起人们对猪肉沙门氏菌污染和检测方法的关注。 Salmonella is an important pathogenic bacteria that causes food-borne diseases.The pollution rate of pork and pork products is very high.Therefore,the quality and safety of meat products have become a major concern for the society.The rapid and accurate detection of Salmonella in food is an important means to prevent and control the transmission of Salmonella.In this paper,the ways of contamination of pork by Salmonella and several detection methods of Salmonella were reviewed to draw attention to the pollution and detection methods of Salmonella in pork.
