摘要
目的 了解广西食品中沙门氏菌的污染状况,初步确定易受污染的食品,为防范由沙门氏菌引起的食物中毒和食源性疾病监测提供科学依据。方法 在广西南宁等6个城市建立食品污染物监测点,定期随机采集6类农贸市场的食品,检验方法按照中国疾病预防控制中心营养与食品安全所统一的沙门氏菌检验方法进行。结果2002~2005年共监测6类食品1872份,检出沙门氏菌128株,检出率为6.84%,分属6个群、19个血清型。结论 在广西食品中不同程度受到沙门氏菌的污染,以生畜禽肉污染严重。应加强畜、禽类屠宰、运输、加工过程的卫生管理和监测,减少食源性疾病的发生。
Objective To understand the situation of Salmonella contamination in food and to provide evidence for preventing foodborne infections caused by Salmonella. Methods In 6 surveillance sites around Guangxi Province, food samples were collected from 6 kinds of markets and examined for the presence of Salmonella according to guidelines instructed by the National Institute of Nutrition and Food Safety, Chinese Center for Disease Control and Prevention. Results Among the 1,872 samples of 6 kinds of food collected from 2002 through 2005, 128 (6.84 % ) Salmonella isolates were identified and typed to 6 serogroups and 19 serotypes. Conclusion In Guangxi Province, food contamination by Salmonella, particularly in raw meat and poultry, is a health concern. Enhanced management and monitoring in slaughter, process and transportation of meat and poultry are needed to reduce the incidence of foodborne infections.
