摘要
细胞固定化技术从20世纪70年代开始快速发展,现已在在发酵工业、生物能源、化学分析、医药工业等多个领域得到了广泛的运用,充分显示了这种技术的优越性。同时,固定化细胞生长速度快、反应快、不易染菌、节约成本、产物易于分离,越来越多的应用于发酵领域中。凭借以上优点,固定化酵母也被越来越多的研究者深度研究,不同的固定化方法和固定化载体对酵母固定化的效果有很大影响。文章综述了传统的酵母固定化方法和新型固定化方法,并介绍了固定化酵母在酿造技术和燃料乙醇领域的应用概况,展望了固定化酵母的应用前景和研究方向。
Immobilized cell technology is a biological technology developed rapidly after the 1970 s and now widely used in many fields,including fermentation industry,food industry,chemical analysis and pharmaceutical industry,fully displaying its superiority. Due to the properties of fast growth,quick reaction,anti-pollution ability,cost effective,and convenience for separation,immobilized cells are more and more applied in the field of food and fermentation. With the above advantages,the immobilized yeast was also studied by more and more researchers. Different immobilization methods and immobilized carrier had great influence on the effect of immobilized yeast. The traditional yeast immobilization methods and new immobilization methods were reviewed in this paper. The application situation of immobilized yeast in brewing technology and the field of fuel ethanol were introduced. The application prospect and the research direction of the immobilized yeast were also forecasted in this paper.
