血橙橙皮色素最佳提取工艺及稳定性的研究 被引量:1

摘要 用浸提法提取新鲜成熟血橙橙皮中的色素,通过对提取剂、提取时间、固液比及提取温度的试验,确定提取该色素的最佳工艺条件为:选用乙醇为提取剂,在固液比为1:70的情况下,浸提时间5个小时,浸提温度为60℃.所提取的血橙皮色素热稳定性较好,在强酸强碱性环境下,稳定性有所下降,在中性和弱酸碱性环境下,稳定性较好;大多数金属离子如Na+、Mg2+、Ca2+等对该色素影响较小,Zn2+和Cu2+对色素有明显的增色作用;氧化性物质会使血橙皮色素颜色变淡,影响其稳定性,还原性物质对该色素作用不明显. Immersed extraction is used to extract the pigment from fresh ripe blood orange peel by.The experiments on extraction agents,extracting time,the liquid-solid ratio and extracting temperature show how to determine the optimal extraction process.That is,choosing ethanol as extraction reagent,with its ratio of liquid to solid being 1:70,with 5 hours of extraction,and the temperature of extraction: 60℃.The thermal stability of the blood orange pigment is good;in strong acid and alkaline solutions,the stability is reduced,while in neutral and weakly acid and alkaline solutions,the stability is good.Most metal ions,such as Na+,Mg2+,Ca2+,cannot affect the stability strongly.While Zn2+ and Cu2+ can deepen the color of this pigment.Oxidizing substances can make the color of the pigment fade,and affect its stability,while the pigment is not reacted with reducing substances.
