橘皮色素的微波辅助提取及其抗氧化活性研究 被引量:6

摘要 以象山一家罐头厂所废弃的橘子皮为原料,研究了橘皮中功能色素的不同提取工艺.在单因素水提试验的基础上,用微波辅助水提法进行正交试验,得到了橘皮色素的最佳浸提条件为:微波处理2 min,料液比为1∶12,70℃下浸提1次,每次3.5 h,在此条件下提取物多酚含量可达0.037 mg/mL;通过DPPH法测定橘皮提取物的抗氧化性能.结果表明,随着提取物质量浓度的增加而增大. The different extraction processes of functional pigments in orange peel were studied. On the basis of the single-factor test, microwave-assisted water extraction was used to provide an orthogonal test. The result showed that when the conditions were microwave-assisted 2 min, solid-liquid ratio of 1 : 12, extraction temperature 70 ℃ and time 3. 5 h, the yield of polyphenols was up to 0. 037 mg/mL. The antioxidation activity of orange peel pigments were determined by DPPH method. The result shows that the radical scaernging rate is increased by the increasing of the concentration of the extraction.
