摘要
以富硒菜籽脱皮脱脂粕为原料,用酸性水脱除植酸和硫甙后碱溶酸沉制备得到富硒菜籽分离蛋白。再以富硒菜籽分离蛋白为原料,用碱性蛋白酶进行酶解,水解时间为7小时,温度为50℃,酶解液的pH= 8.0,底物浓度为3%时,其菜籽分离蛋白水解度达32.51%,氮收率达91.28%,蛋白肽产品含硒量为6.02ppm。
Selenium- enriched rapeseed protein was prepared by alkali extraction and then acid precipitation from selenium -enriched defatted rapeseed meal from which the phytic and glucosinolates were extracted. The enzymehydrolycis of rapeseed protein isolate was studied, through the single factor experiment, the effects of enzyme category, concentration of substrate, time of enzymehydrolycis, the doses of enzyme were described. The experiment shows that the optimal conditions are: the time of enzymehydrolysis is 7 hours, temprature 50℃, pH = 8, concentration of substrate is 3%. The degree of hydrolysis(DH) is 32.51%, the recovery rate of nitrogen is 91.28%. The content of Selenium is 6.02ppm.
