摘要
以富硒菜籽脱皮脱脂粕为原料,在pH12的条件下,用NaOH溶液浸提3次,每次浸提35min,固液比为1∶12,浸提温度50℃,得到富硒菜籽分离蛋白.产品蛋白质含量达83.37%,其蛋白质提取率为26.0%,硒的含量富集至5.87 mg/kg.
The rapeseed protein isolates from rich Selenium defatted rapeseed meal with alkali - solution and acidisolation method were investigated. The results showed that the optimal conditions was: the ratio of meal to solvent was 1 : 12, pH 12, extracted for 3 times, 35 min once at 50℃. The content of protein was 83.37%, the extraction rate of protein was 26.0 %, the content of selenium can be enriched to 5.87 ppm.
