摘要
对人工窖泥的退化进行了表观和理化指标的研究 ,分析其产生的原因。并通过实际生产认为退化窖泥生产的酒质量明显下降 ,不具有浓香型酒的风格。通过比较养护窖泥的方法 。
The culture technology of the artificial cellar mud and the application for industrial scale were deeply studied in this paper. By analyzing the physical and chemical properties of the degenerate artificial cellar mud, we found out the main reasons for the degeneration during production period. Comparing with different methods for rejuvenation of the degenerate artificial cellar mud, an economical and practical method was carried out and got excellent results.
