摘要
采用己酸菌纯种培养与混合培养相结合的技术培养己酸菌,己酸菌种子培养与一级培养采用无氧罐厌氧培养,并将一级厌氧培养的己酸菌液以30%的接种量应用于二级混合培养中,培养好的混合己酸菌液应用于窖泥制作中,发酵成熟的窖泥中己酸菌数经检测能达到克泥每106个以上,将窖泥运用于生产实践中,我公司在生产第一排即能产优级酒,平均优级酒率达15.21%,解决了以往改造后的窖池第一排无优级酒的状况,另外出酒率达35%,产质量均达到了理想的试验目标。
Caproic acid bacteria were cultured using the pure culture combined with mixed culture technologies. The anaerobic culture in anaerobic tank was used for the seed culture and the primary culture. And 30% of this culture was inoculated to the secondary mixed culture. The cultured mixture was applied to the cellar mud preparation. The amount of the caproic acid bacteria reached 106 per gram in the mature cellar mud. In practice, the excellent liquor was made in the first effluent in our company, and the average of excellent liquor production rate was 15.21%. The problem that no quality liquor was produced in the first effluence after the cellar modification was solved. The liquor production rate reached 35%, and also the yield and quality were up to the ideal test target.
