摘要
辣椒红色素是天然红色素的一种 ,可从干红辣椒中提取。文中对有机溶剂从干红辣椒中提取辣椒红色素进行了研究。考察了质量分数为 95 %酒精、石油醚和丙酮对辣椒红色素提取的影响 ,结果表明丙酮为最优的提取溶剂。通过正交实验确定丙酮提取的最优条件为 :每次提取时间为 3h ,提取温度为 30℃ ,提取每克辣椒所用溶剂总量为 2 5mL ,提取次数为 3次。
Capsanthin is a kind of natural red pigment. It can be extracted from hot red peppers. Capsanthin extraction technique with an organic solvent was studied. The influence of different organic solvents on extraction of capsanthin was investigated. The results indicate that acetone is the best solvent. By the orthogonal experiment, the best extraction conditions are found: the extraction time is 3、h, extraction temperature is 30、℃, acetone volume is 25、mL for 1g hot red pepper, and the extraction times is 3.
