2017年一2020年绍兴市越城区食品安全风险监测状况分析 被引量:7

Monitoring and analysis of food security risks in Yuecheng District from 2017 to 2020

摘要 目的了解绍兴市越城区食品中化学物及有害因素、微生物及致病因子污染水平和趋势,及时发现食品安全隐患,为食品安全风险评估和制定合理的控制措施提供科学依据。方法按照《食品安全国家标准》《国家食品安全风险监测工作手册》和《浙江省食源性致病菌监测工作手册》,在2017年-2020年从绍兴市越城区不同食品流通环节采集各类样品进行检测,并对结果进行统计分析。结果 2017年-2020年共检测食品样品3 294份,其中化学物及有害因素监测样品2 253份,合格2 175份,合格率为96.54%,不合格样品和指标主要为梭子蟹中的镉、即食海蜇中的铝等。微生物监测样品1 041份,合格958份,合格率为92.03%,食品污染检出的病原菌主要是副溶血性弧菌、溶藻弧菌、蜡样芽胞杆菌、克罗诺杆菌、单核细胞增生李斯特菌、沙门菌等。结论绍兴市越城区食品合格率较高,但部分食品仍存在安全隐患。 Objective To understand the contamination level and trend of chemical substances,harmful factors,microorganism and pathogenic factors in food in Yuecheng District,Shaoxing City,to discover potential food safety hazards in time,and to provide scientific basis for food safety risk assessment and reasonable control measures. Methods According to the National Food Safety Standard,Food Safety Risk Monitoring Manual Of Zhejiang Province and Food Borne Pathogenic Bacteria Monitoring Manual Of Zhejiang Province. All kinds of samples were collected from different food circulation links in Yuecheng District of Shaoxing City for testing,and the results were analyzed. Results From 2017 to 2020,a total of 3 294 food samples were tested,3 133 were qualified,and the passing rate was 95. 11%. Among them,2 253 samples were monitored for chemical pollutants and 2 175 were qualified,with a qualified rate of 96. 54%. The unqualified samples and indexes are mainly cadmium in swimming crab and aluminum in instant jellyfish. There were 1 041 microbiological monitoring samples,958 of which were qualified,with a qualified rate of 92. 03%. The pathogens causing food contamination were mainly Vibrio parahaemolyticus,Vibrio alginolyticus,Bacillus cereus,Cronobacter,Listeria monocytogenes and Salmonella. Conclusion The passing rate of food in Yuecheng District,Shaoxing City is higher,but there are some potential risks.
