2011年重庆市食品风险监测食源性致病菌监测分析 被引量:10

摘要 目的:了解重庆市市售食品食源性致病菌污染状况。方法:依据《2011年食源性致病菌监测工作手册》检验方法对样品分别进行副溶血性弧菌检出率、金黄色葡萄球菌、蜡样芽胞杆菌等8种食源性致病菌进行检测分离、鉴定。结果:监测熟肉制品、即食性非发酵豆制品、生食性动物水产品、婴幼儿食品、凉拌菜、鲜榨果蔬汁等十类共计1530件,检出致病75株,总检出率为4.90%(75/1530)。其中,副溶血性弧菌检出率9.44%(17/180),金黄色葡萄球菌检出率2.15%(29/1350);蜡样芽胞杆菌检出率12.67%(19/150)。结论:重庆地区市售米饭、生食性动物水产品、非发酵即食性豆制品、凉拌菜和鲜榨果蔬汁食源性致病菌污染较严重,因腊样芽孢、金黄色葡萄球菌和副溶血性弧菌导致食源性疾病的风险较高。 Objective:To understand the contamination status of foodborne pathogens in food from Chong-qing markets.Methods:Eight kinds of foodborne pathogens such as foodborne pathogens were detected,isolated and identified according to "Workbook for foodborne pathogen monitoring in 2011".Results:One thousand,five hundred and thirty food samples in 10 categories,such as cooked meat products,ready-to-eat aquatic product and non-fermented bean products,Infant formula foods,vegetable salad,fresh fruit and vegetables juice,and so on,were tested.75 bacteria strains were isolated,the overall Detection rate was4.90 %(75/1530).The Detection rate of Listeria monocytogenes,Staphylococcus aureus,and Bacillus cereus,was 9.44%(17/180),2.15%(29/1350),and 12.67%(19/150)separately.Conclusion:The Situation of some food contaminated by foodborne pathogens,such as rice,ready-to-eat aquatic product and non-fermented bean products,vegetable salad,fresh fruit and vegetables juice,was serious relatively in Chongqing markets,and the higher risk human foodborne diseases may be caused by Bacillus cereus,Staphylococcus aureus and Vibrio parahaemolyticus.
