深圳市罗湖区2010年-2014年市售水产品受食源性致病菌污染状况分析 被引量:7

Analysis of food-borne pathogenic bacteria contamination status in retailed aquatic products in Luohu district of Shenzhen from 2010 to 2014

摘要 目的分析深圳市罗湖区2010年-2014年市售水产品受食源性致病菌污染状况。方法采集2010年-2014年深圳市罗湖区市售水产品样品819份,对沙门菌、单核细胞增生李斯特菌、霍乱弧菌、副溶血性弧菌和创伤弧菌5类食源性致病菌污染现状进行分析。结果 819份水产品中检出致病菌样品175份,检出率为21.4%,鲜活虾蟹、鲜活(冰鲜)海水鱼和鲜活贝壳检出率较高,分别为29.1%、24.6%和22.4%;副溶血性弧菌检出率最高,为20.0%,其次为创伤弧菌(8.7%)、沙门菌(1.2%)、单核细胞增生李斯特菌(0.6%)、霍乱弧菌(0.1%);2010年-2014年水产品中食源性致病菌的检出率分别为28.7%、22.6%、20.8%、19.7%、17.7%,总体呈下降趋势;而副溶血性弧菌检出率则呈现逐年升高趋势。结论深圳市罗湖区市售水产品受食源性致病菌污染不容忽视,主要的食源性致病菌种类是副溶血性弧菌和创伤弧菌,应进一步加强对水产品致病菌的监测及卫生监管。 Objective To investigate the food- borne pathogenic bacteria contamination status in retailed aquatic products in Luohu district of Shenzhen from 2010 to 2014. Methods 819 retailed aquatic products samples were collected from Luohu district of Shenzhen from 2010 to 2014,and contamination status of food- borne pathogens,such as Salmonella,Listeria monocytogenes,Vibrio cholerae,Vibrio parahaemolyticus and Vibrio vulnificus were analyzed. Results 175 samples of retailed aquatic products from 819 samples were detected with pathogen contamination,with the detection rate of 21. 4%. The detection rates of fresh crabs,fresh( chilled) sea fish and fresh shellfish were higher,which were 29. 1%,24. 6% and 22. 4%,respectively.The detection rate of Vibrio parahaemolyticus was the highest( 20. 0%),followed by Vibrio vulnificus( 8. 7%),Salmonella( 1. 2%),Listeria monocytogenes( 0. 6%) and Vibrio cholerae( 0. 1%). From 2010 to 2014,the detection rates of aquatic pathogens were 28. 7%,22. 6%,20. 8%,19. 7% and 17. 7%,respectively,showing a downward trend,however,the detection rates of Vibrio parahaemolyticus were increasing year by year. Conclusion The food- borne pathogenic bacteria contamination status in retailed aquatic products could not be ignored in Luohu district of Shenzhen. The main types of food borne pathogens were Vibrio parahaemolyticus and Vibrio vulnificus. It should further strengthen the monitoring of food- borne pathogenic bacteria contamination in retailed aquatic products and health supervision.
