国内三省居民山梨酸及其钾盐膳食暴露风险评估 被引量:2

Dietary intake and risk assessment of sorbic acid and its potassium salt in three provinces of China

摘要 目的评估河北、浙江和江西三省居民膳食中山梨酸及其钾盐的暴露水平及其潜在健康风险。方法利用2012~2016年我国食品中山梨酸及其钾盐含量数据、2016年河北、浙江和江西三省居民食物消费量调查数据,采用简单分布评估法计算河北等三省居民山梨酸及其钾盐的膳食暴露水平,并进行健康风险评估。结果河北等三省居民膳食山梨酸及其钾盐每日平均暴露量及每日高食物量消费人群暴露量(P95)分别为0.028 mg/kg·bw(占ADI的0.9%)和0.144 mg/kg·bw(占ADI的4.8%)。西式糕点、蛋白饮料、肉灌肠类和面包是河北等三省居民膳食山梨酸及其钾盐暴露的主要来源,这四类食品的累计贡献率达到50.6%。如果严格执行食品安全国家标准关于山梨酸及其钾盐的限量规定,河北等三省居民膳食山梨酸及其钾盐每日平均暴露量和P95暴露量将分别下降3.2%~5.7%和0.7%~6.9%。结论目前河北、浙江和江西三省居民膳食山梨酸及其钾盐暴露量对人群健康造成的风险较低,处于可接受水平。 Objective To evaluate health risk and the dietary exposure level of sorbic acid and its potassium salt in residents of three provinces in China. Methods The dietary exposure level of sorbic acid and its potassium salt in residents of three Chinese provinces(Hebei, Zhejiang and Jiangxi) was calculated by simple distribution assessment method based on the data of sorbic acid and its potassium salt concentration in foods from 2012 to 2016 in China and the data of food consumption survey in three Chinese provinces in 2016. Results The average daily exposure and the 95 percentile exposure level(P95) of sorbic acid and its potassium salt were 0.028 mg/kg·bw(0.9% of average daily intake, ADI) and 0.144 mg/kg·bw(4.8% of ADI), respectively. Western style pastries, protein drinks, sausages and breads were the main sources of exposure, accounting for 50.6% of the total exposure. If the national food safety standard on sorbic acid and its potassium salt limit is strictly implemented, the average daily exposure and P95 exposure will be reduced by 3.2%~5.7% and 0.7%~6.9%, respectively. Conclusion The risk of dietary exposure to sorbic acid and its potassium salt in residents of three Chinese provinces is low and acceptable.
