摘要
膳食纤维具有多种营养功能,对于维持膳食平衡具有重要作用。膳食纤维所富有的特殊营养功能,已经被医学界和食品界广泛关注,开发和利用膳食纤维已经成为一种食品发展趋势。本文主要介绍了目前膳食纤维最常用的四种提取方法,并阐述了膳食纤维在焙烤、肉制品、乳制品等食品领域的广泛应用,为膳食纤维的工业化生产及深度开发利用提供有效参考。
Dietary fiber has a variety of nutritional functions and plays an important role in maintaining dietary balance. Dietary fiber is rich in special nutritional functions, has been widely concerned by the medical community and the food industry, the development and utilization of dietary fiber have become a trend. This paper introduced the most popular extraction methods applied in dietary fiber, and its application in roasting, meat and dairy, providing effective reference for industrial production and deep processing and utilization of dietary fiber.
