摘要
5-羟甲基-2-糠醛(5-hydroxymethyl-2-furfural,5-HMF)作为一种生物活性物质,是药品和食品中存在较为广泛的共性成分,对其深入研究有利于阐释药品的作用、食品的功能,对提高药品、食品的安全性具有重要意义。5-HMF在发挥生物活性作用的同时,也存在安全性隐患,且不良反应的显现与其浓度含量相关。本文对5-HMF的生物活性及其安全性研究进展进行综述,整理分析5-HMF的形成及其影响因素、生物活性和安全性等相关文献,总结该共性成分在药品和食品中的作用及其对产品质量的影响,为提高药品与食品的有效性和安全性提供参考。
As a bioactive substance,5-hydroxymethyl-2-furfural( 5-hydroxymethyl-2-furfural( 5-HMF) is a common component used in medicines and foods. Its in-depth studies are beneficial to explain the role of drugs and the function of foods. It is of great significance to improve the safety of drugs and foods. While 5-HMF plays a potential role in biological activity,its side effects are also related to its concentration. In this paper,the research progress in 5-HMF was reviewed including the formation of 5-HMF,its influencing factors,biological activity and safety,the use of the common component in medicines and foods and its effect on the quality of the products are summarized to provide reference for the improvement of efficacy and safety of drugs and foods.
