摘要
以无水氯化钙、山梨糖醇和六偏磷酸钠为因素,以吸湿量为指标,采用混料设计得到了复合吸湿剂配比:无水氯化钙16%,山梨糖醇24%,六偏磷酸钠60%。双孢蘑菇(200 g/包)MA气调过程中,分别添加4,8和12 g复合吸湿剂,以未添加吸湿剂的作为CK,研究其在温度2℃贮藏10 d期间的理化指标变化。结果表明,与CK相比,添加吸湿剂显著推迟了双孢蘑菇呼吸越变和多酚氧化酶活性高峰来临的时间,提高了菇肉的白度值和贮藏前期的硬度,降低了贮藏前期多酚氧化酶的活性。吸湿剂添加量为8 g和12 g时,双孢蘑菇的失重率、膜透性显著增加,而4 g与CK无显著差异。综合考虑,确定双孢蘑菇MA贮藏时,复合吸湿剂最适添加量为4 g/200 g鲜菇。
With calcium chloride, sorbital, sodium hexametaphoshpate as factors, and moisture absorption capacity as index, the optimum formula of compound absorbers was obtained by mixture design. The percent of calcium chloride, sorbital, and sodium hexametaphoshpate was 16%, 24% and 60%, respectively. Compound absorbers with mass of 4, 8 and 12 g were added during MA storage of Agaricus bisporous(200 g/package) and their inf luences on physicochemical indexes were evaluated during 10 d storage at temperature of 2 ℃. The Agaricus bisporous without using absorbers was considered as CK. The results showed that compared with CK, the time of respiratory climacteric and peak of polyphenol oxidase activity dramatically delayed, while L* value and hardness of A. bisporous increased. The weight loss and member permeability of Agaricus bisporous signif icantly increased for treatments of 8 and 12 g, whereas they varied little for the treatment of 4 g and CK. Overall consideration, the optimum dosage of compound desiccants for MA storage(200 g per package) of A. bisporous was 4 g.
