相对湿度对双孢菇采后生理的影响 被引量:6

摘要 在温度为3℃,相对湿度分别为70%、80%、90%、100%条件下,比较双孢菇采后贮藏过程中感观、失重率、褐变、呼吸强度以及多酚氧化酶(PPO)活性的变化。结果表明,随着贮藏环境相对湿度的增加,双孢菇失重减少,褐变程度与PPO活性降低。在相对湿度为100%条件下,双孢菇在贮后第8天表面发粘,严重影响其感官品质和商品价值。综合考虑各指标,双孢菇采后贮藏最适相对湿度为93%~100%。 The Effects of storage in different relative humidity (70%, 80% ,90%, 100% ) to postharvest physiology of ogaricus bisporus at 3 ℃ were studied by investigation the changing of agaricus bisporus appearance, weight losing rate, respirator rate, browning degree and the active of PPO. The results show that weight losing rate, brawning degree and the active of PPO all decreased with the increasing of relative humidity. The scarfskin of agaricus bisparus which stored in 100 percent relative humidity felt pastiness. That affects agaricus bisporus appear nee quaility and value. All data were considered that the optimum condition of relative humidity is 93%-100% for postharvested agaricus bisporus.
