摘要
为评价白玉蜗牛营养成分和营养价值,以去壳的白玉蜗牛为原料,对其常规营养成分及各种氨基酸的含量进行测定,并利用氨基酸比值系数法对蛋白质的营养价值进行评价。结果表明,白玉蜗牛是一种低脂高蛋白的营养食品,其比能值较高,而能值与蛋白质的比值(E/P)相对较低。白玉蜗牛中总氨基酸含量较高,达到了80.33%,各种人体必需氨基酸比例均衡,比值系数分达到了89.90。在白玉蜗牛的各种必需氨基酸中,第一限制氨基酸为缬氨酸。因此,白玉蜗牛是一种低脂肪高蛋白的营养健康食品。
The general nutritional composition and contents of amino acids of shelled white jade snail were detected, and the nutritional value of protein was also evaluated by the method of ratio coefficient of amino acid. White jade snail was a low-fat nutritional food with high protein,the ratio of energy value and quality of the sample was high,and the ratio of energy value and quality of protein of the sample(E/P)was low.The content of total amino acid of white jade snail was high,which reched to 80.33%.These amino acids included all kinds of human essential amino acids and the proportion was appropriate, SRC was 89.90.1n all kinds of human essential amino acids,the first limitincl amino acid was valine.White iade snail was a senior health food with high protein.
