摘要 异麦芽酮糖是一种具有多种功能的新型甜味剂,是健康糖。本文简述了异麦芽酮糖的理化特性,介绍了异麦芽酮糖生产相关工艺技术,包括固定化微生物生产法和蔗糖异构酶催化法,并展望了异麦芽酮糖的市场前景,为异麦芽酮糖的生产及其在食品工业的应用提供参考。 Isomaltulose is a new health sweetener with many properties. The research progress in the production of isomaltulose was reviewed, including microbe strain immobilization technology and biocatalysis with sucrose isomerase. Commercial application of isomaltulose was prospected. It is in favour of developing isomaltulose production and its application in food industry.
