摘要 异麦芽酮糖是一种具有多种功能的新型抗龋齿性甜味剂,具有广阔的应用前景。文中从生物催化过程中的关键酶、固定化生产工艺以及产物的分析及分离提取方法等方面介绍了生物催化生产异麦芽酮糖的国内外研究进展,并提出进一步选育高产菌株、优化生产工艺并在此基础上对关键酶进行改造是提高原料转化率以及扩大生产规模的关键。 As a new noncariogenic sweetener with many properties, isomaltulose was commercially used in food industries. The research progress in the production of isomaltulose by biocatalysis was reviewed, including the key enzyme, the immobilization technology, the analysis method and the downstream recovery process. The problems in the process of production of isomaltulose by biocatalysis were discussed. It was pointed out that the research emphasis should be placed on screening ideal microbe strains, optimizing the technology and reforming the key enzyme to enhance the transformation efficiency and expanding the production scale.
