摘要
红曲色素是天然色素,具有营养、无毒、多功能等优点。固态发酵是红曲色素生产的传统方法,与液体发酵相比具有独特的优点,一直受到研究者关注。对国内外近期关于红曲色素研究的报道进行了综述,对影响固态发酵产红曲色素的条件进行了归纳和分析,可为红曲色素固态发酵的推广提供借鉴。
As a kind of natural pigment,the Monascus pigment has several advantages such as nutrition,no toxicity and multi-function.Solid-state fermentation is the traditional method to produce Monascus pigment,which has unique advantages in comparison with liquid fermentation and always been paid attention to by the scientists.The paper reviews the recent research reports on Monascus pigment,summarizes and analyzes the conditions influencing the production of Monascus pigment through solid-state fermentation so as to provide reference for its popularization.
