摘要
以草鱼鱼鳞为原料优化鱼鳞脱钙、脱杂蛋白前处理工艺。通过单因素试验及正交试验,分别以鱼鳞脱钙率及胶原蛋白含量为指标,研究最佳鱼鳞酶解前处理工艺条件。结果表明,脱钙工艺中HCl浓度0.4mol.L-1、料液比1∶20、脱钙时间6 h可得到较高的脱钙率;最佳除杂蛋白工艺参数为NaOH浓度0.15 mol.L-1、料液比1∶20、脱杂蛋白时间12 h。
In this paper,the optimal pretreatment conditions of fish scales before enzymatic hydrolysis was investigated through single effecting factors and orthogonal tests by the ratios of fish scales decalcification rate and the contents of collagen.The best HCl concentration,decalcifying time,and the ratio of solid material to liquid material for decalcification are 0.4 mol·L-1,1 to 20,and 6 hour respectively.And the best conditions of taking-off noncollagenous proteins was NaOH 0.15 mol·L-1,the ratio of solid material to liquid material 1∶20,taking off noncollagenous proteins's time 12h.
