摘要
目的建立可应用于工业化生产的鱼鳞柠檬酸钙制备工艺。方法通过降低柠檬酸用量,建立鱼鳞钙质溶出和析出一步完成的制备工艺,并通过滴定法和电感耦合等离子体发射光谱法检测了所得柠檬酸钙和微量镁、磷和锌含量。结果柠檬酸用量和总液量减少,并省却加碱中和环节,柠檬酸钙收率提高了88.3%,其中柠檬酸钙含量95.24%,微量元素镁含量0.03%,磷含量0.47%,锌含量10.9μg/g。结论实现了通过鱼鳞一步简捷制备高含量柠檬酸钙的目的,产品天然复合微量镁、磷和锌元素,工艺适合工业化规模生产用于补钙的食品强化剂。
Objective To establish an industrial preparation method for calcium citrate from fish scale. Methods The amount of citric acid was reduced to find the proper conditions for the dissolution and precipitation of calcium in fish scale by only one step. The content of calcium citrate was determined by titration, and the contents of Mg, P and Zn in the products were determined by inductively coupled plasma atomic emission spectrometry. Results The amount of citric acid and total liquid volume were reduced significantly and an alkali neutralization process was omitted, while the yield of calcium citrate was increased by 88.3 %. The contents of calcium citrate, Mg, P and Zn were 95.24 %, 0.03 %, 0.47 % and 10.9μg/g, respectively. Conclusion A simple and effective one-step way can be used to prepare fish scale calcium product with high content of calcium citrate and Mg, P and Zn. The method is suitable for the industrial-scale production of calcium supplement from fish scale.
