摘要
虾青素是一种酮式非维生素A源的类胡萝卜素,常被用作水产动物的饲料添加剂,具有多种生理功能。笔者主要就虾青素的理化性质、存在形式、抗氧化性、增强免疫力及在水产动物养殖中的着色作用等方面进行综述,说明虾青素具有很好的着色和增强水产动物免疫力的作用,在水产动物养殖中有良好的应用前景。
Astaxanthin is a non-vitamin A-sourced ketonic carotenoid. Astaxanthin often serves as feed additives of aquaculture animals,which has multi-physiological functions. The authers summarized the physical and chemical features, general molecular patterns and origin of astaxanthin, the function of pigmentation ,antioxidation, immunology. In aquaculture production, astaxanthin may render a practical significance in the future.
