As a kind of material with special physiological function,astaxanthin has broad prospects in the industries of food,medicine,and cosmetics due to its antioxidant and pigmentation ability.This paper mainly discussed astaxanthin＇s structural features,physical and chemical properties,biological functions,and its application prospects.
