摘要
虾青素是一种具有多种生理功能的类胡萝卜素,在水产动物养殖中有重要作用。本文描述了虾青素的理化性质和来源,对虾青素在水产动物养殖中着色作用、抗氧化性、抗应激和提高水产动物生长和繁殖性能等方面进行综述。
Astaxanthin was a kind of carotenoid,which has muhi-physiological functions.It has important role in cul- ture aquatic animals especially.The physical and chemical character and origin of astaxanthin, and the function of pigmentation, antioxidation, anti-stress, and improving the growth and the reproduction performance of astaxanthin on aquatic animal were summarized.
