摘要
啤酒中的高级醇含量对啤酒风味有重要的影响.对啤酒中高级醇的来源和形成机理以及四种主要高级醇含量对啤酒风味的影响进行了研究,确定了啤酒中四种主要高级醇含量的最佳范围。
In the beer, higher ethanol has an important influence on the beer flavor. In this article, we have the research about the origin and the formation mechanism of the beer higher ethanol and the effect of higher ethanol content on beer flavor. Finally, we get the best range of higher ethanol of the beer.
