摘要
以清酒酵母JS-10为出发菌株,经紫外照射结合重氮染色平板筛选,选育出1株低产异戊醇酵母菌株A1。与出发菌株相比,异戊醇含量降低了31.11%,乙酸异戊酯含量增加了132.24%,高级醇总量降低了32.68%,发酵性能基本保持不变。
A sake yeast strain Al with low-yield of isoamyl alcohol was produced through UV radiation and diazo staining treatment of sake yeast strain JS-10 (used as starting strain). Compared with parent strain of sake yeast JS-10, the content of isoamyl alcohol and the content of total higher alcohols of the strain AI decreased by 31.11% and 32.68 % respectively, and the content of isoamyl acetate of the strain Al increased by 132.24 %, however, there was rare change in the fermentation properties.
