摘要
利用高效液相色谱和紫外可见吸收光谱、感耦等离子体发射光谱等方法对籽瓜的瓜皮、瓜瓤、瓜籽仁分别进行了20余项营养成分分析;瓜籽仁水分为5.04%、脂肪含量为20.27%、蛋白质含量为21.28%、磷、钾、锰、锌等含量与南瓜籽仁接近,铁含量比南瓜仁铁含量高一倍;瓜皮、瓜瓤含水量达90%以上,含钙、磷、钾、镁较多,且瓜皮的总糖量为4.52%,瓜瓤总糖量为30.89%,籽仁、瓜皮均含有13种以上氨基酸。
Using the method of HPLC, UV-Visible ICP-MS more than 20 items of the nutritious composition in melon-peel, flesh and melon seed of seed-melon were analyses; the content of moisture 5.04 %, fat 20.28 % ,protein 21.28 %, P, K, Mn, Zn etc. in melon seed are approximate to the content in pumpkin seed , the content of iron is double to pumpkin seed ; the content of water in melon-peel and flesh is more than 90 % , contains more Ca, P, K and Mg, the total sugar in melon-peel is 4.52 % and the total sugar in flesh is 30.89 % ,both melon seed and melon-peel contain more than 13 kinds of amino acids.
