栝楼黄色素的提取及性能研究 被引量:9

摘要 为促进栝楼黄色素作为食品添加剂的开发利用,对栝楼中黄色素的提取方法及理化性质进行了研究。同时研究了常见的部分食品添加剂及金属离子对色素稳定性的影响。结果表明栝楼黄色素的最大吸收波长为438nm,最适宜的提取剂为乙醇,用95%乙醇提取时,提取率为6.85%。该色素易溶于无水乙醇、95%乙醇、乙酸乙酯,不溶于水,在弱酸弱碱条件下稳定,对热稳定,光照对色素具有降解作用;栝楼黄色素对还原剂Na2SO3较敏感,抗氧化性强;蔗糖、NaCl、维生素C等添加物对色素无明显影响;苯甲酸钠、柠檬酸以及Al3+、Mg2+、Cu2+等对该色素的稳定性有影响。从栝楼中提取的黄色素是一种安全、无毒、并具有一定营养价值的天然色素。 In order to promote the use of the yellow pigment in Trichosanthes kirilowii Maxim as a food additive, the extracting method and the physical and chemical property of the yellow pigment in Trichosanthes kirilowii Maxim were studied. At the same time the effects of the common food additives and metal cations on the stability of the pigment were also studied. The results showed clearly that the maximum absorption spectrum of this pigment was 438 nm. The most oppropriate solvent was alcohol.The total yield was 6.85% when extracted with 95% alcohol. The yellow pigment was solube in ethyl alcohol and ethyl isobutyl acetate, insoluble in water.Its stability remained good in weak acid and weak base solution and it was also stable to heat, but not to light.The pigment was sensitive to reductant Na_2SO_3, and had strong antioxidative action. The stability of the pigment was hardly affected by sugar、NaCl and Vitamin C, but could be affected by sodium benzoate、 citric acid and Al^3+ 、Mg^2+ or Cu^2+ . The yellow pigment extracted from Trichosanthes kirilowii Maxim is a safe, nonpoisonous and natural pigment with certain nutritious value.=
