摘要
桔片罐头中的白点现象,严重影响到中国桔片罐头在国际市场上的进一步发展。采用非酶法和酶法去除桔片罐头中的白点(主要成分为桔皮苷),均有较好效果,其中采用酶法(桔皮苷酶)的效果更好。
The phenomen of white Muddy thiny in canned mandarin for exporting serionsly influences its international market shares. Eliminating the main substance-hespericdin which brings white Muddy thiny in canned mandarin, by means of enzyme-hesperidinase using and other non-enzyme means both got good results, and the means of enzyme-hesperidinase using got better result than other means.
