摘要
研究了以紫色甘蔗皮为原料提取色素的基本方法,并进行了紫外 可见光谱、红外光谱的测定.结合文献初步判断该植物色素属于花色甙类,是具有一定开发价值的天然食用色素.
The paper reports a basic method to extract natural pigment from sugarcane skin and carries out the determination of pigment by the ultraviolet and visible light spectrum and infrared spectrum. Supported by related literature, the pigment can be tentatively judged as anthocyanins, a natural edible pigment worth developing.
