摘要
从天然食用紫卷心菜中提取紫红色素 ,并对提取溶剂、温度、时间及次数等工艺条件进了研究 ,研究结果表明该色素的溶解性、热稳定性、光稳定性在酸中的性质及在 5× 10 -5mo1·L-1金属离子溶液中的稳定性是好的 ,氧化剂或还原剂对其有一定影响 ,产率 0 5 % 。
The natural edible blue red pigment were extracted from a blue red Vercapitata.The best conditions and technological progress of extraction including soluble,temperature,time and extracting times etc.and properties of the edible natural blue red pigment were investigated.The results showed that the solubility,the stability to light and heat,properties in acid or base and in 5×10 -5 mol·L -1 solution of metal ions were optimal.It can be affcted by oxdizing agent or reductive agent.Its productive rate is aboout 0 5%.It is a worth pigment of developing.
