摘要
控制食品中致病微生物,减少由致病微生物引起的食源性疾病是一个世界难题。本文结合政府的风险监测、食品微生物的检验技术及生产环节的过程控制,讨论降低由致病微生物引起的食源性疾病的暴发流行几率的途径,以保障食品安全。
Control food pathogenic microbes, reduce foodborne diseases caused by pathogenic microorganism is a world problem. In this paper, combined with the risk of government monitoring and inspection of food microorganism technology, production process control, we discuss the way to reduce caused by pathogenic microorganism foodborne disease outbreak rate, ensure food security.
