摘要 早在远古时期,人类就已经认识到很多疾病是通过饮食传入人体,最后导致人患病,严重危害人类的健康和生命。在当代,如何有效对食品中致病微生物进行控制,从而减少微生物引起的食源性疾病一直是世界医学的一个难题。本文以2017年北京市疾病预防控制中心检查出的48例食源性疾病患者标本微生物检验为例,在研究病原微生物分布情况同时,结合检测系统的建设、检验技术的研发以及食品安全全程管控,提出降低由食品中致病微生物引发食源性疾病的有效策略,以确保食品安全、人类健康。 As early as the ancient,human beings have noticed that many diseases are introduced into the human body through diet,and eventually lead to human illness,which seriously endangers human health and life.In the contemporary era,How to effectively control pathogenic microorganisms in food and reduce the foodborne diseases caused by microorganisms has always been a difficult problem in world medicine.In this paper,48 cases of foodborne disease specimens examined by Beijing disease prevention and control center in 2017 were tested as an example.In the study of the distribution of pathogenic microorganisms,combined with the construction of the detection system,the research and development of inspection technology and the whole process control of food safety,it was proposed to reduce the food caused by pathogenic microorganisms in food.Effective strategies for source diseases are to ensure food safety and human health.
