摘要
本文介绍了核桃种隔为原料,用蒸馏水浸泡提取,棕色素的研究。实验结果表明,光照,各种食品添加剂对色素影响不太大。但Cu^(2+)和Fe^(3+)离子对色素的影响较大。
The paper presents the techniques of extraction brown pigment from inner-membrans of walnut using distilled water. Experiment results show that illumi-nature various food additives do not have much effect on this pigment,however,Cu2+ and Fe3+ have big effects.
