摘要
汉唐时期是关中小麦广泛种植传统形成的关键时期。这不仅得益于不断发展的农作物种植和食用加工技术,灌溉设施的发展、人口的增长和面食的普及也是重要的推动因素。此后,小麦主粮地位的确立,使种植结构得到调整,促进了关中地区饮食结构的形成,也渐次形成了丰富多样的面食文化。
The Han and Tang dynasties were the key periods for the widespread of Guanzhong wheat.This was not only due to the upgrading technologies for crop cultivation and food processing,but also the development of irrigation facilities,growth of population and popularization of pasta.Since then,the status of wheat has established as the staple food,which adjusted the planting structure,built up the dietary structure in the Guanzhong area,and gradually formed a rich and varied pasta culture.
