从“危机”到“有机”:农夫市集的兴起及其生成逻辑——以H市“新农人”农夫市集为例

摘要 面对当前食品安全危机日益加剧的社会现状,人们愈发感受到“舌尖上的危机”,消费者采用用脚投票的方式在日常生活中部分地退出大型超市和农贸市场等主流食物市场体系,转而选择新开辟出的有机农夫市集购买食物。本文认为食品安全危机作为一项系统性社会问题,其存在背后的深层次原因与主流食物体系制度存在的诸多弊端有关,致使造成大规模-脱嵌式、长距离-大空间、链条冗长、信任危机等危机的围困。人们为应对工业化主流食物体系弊端所带来的各类社会问题,在社会心态、消费升级、产业主体、价值认同等多重社会诉求作用的催生下,以农夫市集为代表的替代性食物体系应运而生。农夫市集通过小规模-嵌入式、短距离-小空间、链条极简、信任递增等方面突破主流食物体系的围困,有效地实现了从“危”到“机”的转变,同时在既有食物体系制度之外为消费者提供一个逆向选择,确保“舌尖上的安全”,又为主流食物体系提供一种有力补充。 Faced with the current social situation where the food safety crisis is intensifying,people are increasingly feeling the“crisis on the tip of the tongue”.Consumers vote with their feet in their daily lives to partly withdraw from mainstream food market systems such as large supermarkets and farmers’markets,instead choose to buy food at the newly opened organic farmers’market.This article believes that the food safety crisis is a systemic social problem,and the deep-seated reasons behind its existence are related to many drawbacks of the mainstream food systems,resulting in a large scale-disembedding,a long distance-large space,lengthy chains,trust crisis and other crises.In order to deal with various social problems brought about by the disadvantages of the industrialized mainstream food system,under the influence of multiple social appeals such as social mentality,consumption upgrades,industrial subjects,and value recognition,an alternative food system represented by farmers’markets came into being.The farmer’s market has broken through the siege of the mainstream food system through a small scale-embedded,a short distance-small space,minimal chain,and increasing trust,effectively realizing the transformation from“crisis”to“opportunity”.Outside the food system,it provides consumers with an adverse selection to ensure“safety on the tip of the tongue”,and provides a powerful supplement to the mainstream food system.
