摘要
粮油加工学是大学本科食品科学与工程专业的专业基础课,是一门以化学为基础的学科,侧重实践的运用。中学化学理论知识不能与实践相联系,从而影响中学生对化学的学习兴趣。为提升初中生化学学习兴趣,将粮油加工学部分实验内容以浅显易懂、生动活泼的方式传授于廊坊市第十三中学八年级学生,通过理论知识讲解、粮油加工学相关实验操作教学、问卷调查三部分内容进行研究实验。通过问卷调查及数据分析,对学生在学习粮油加工学后的情况进行调研总结。结果表明,班级学生在学习粮油加工学后,化学学习兴趣具有一定提升。研究为初中教育教学改革提供新思路,为大学教育中人才的培养搭建桥梁,对教学改革的推进起到积极作用。
Grain and oil processing is a basic course for undergraduate food science and engineering majors.It is a subject based on chemistry and focuses on the application of practice.The chemistry theoretical knowledge in middle school does not be connected with practice,affecting the interest of middle school students in chemistry.In order to enhance junior high school students'interest in chemistry learning,the experimental contents of grain and oil processing are taught to Grade eight students of the 13th Middle School of Langfang in a simple and easy to understand and lively way.The research experiments are carried out through theoretical explanation,experimental operation teaching related to grain and oil processing and questionnaire survey.Through questionnaire survey and data analysis,the students'situation after learning grain and oil processing is investigated and summarized.The results show that the students'interest in chemistry study has been improved to some extent after learning grain and oil processing,which provides a new idea for the teaching reform of junior high school education,lays a foundation for the cultivation of talents in university education,and plays a positive role in promoting the teaching reform.
