出口火锅底料风险预警特征研究及发生原因分析

摘要 为监管检验提供科学依据,促进火锅产业安全高质量发展。系统全面比较分析从中国技术性贸易措施网和食品伙伴网等查询到的30起我国出口火锅底料被韩国、日本和美国、831起火锅底料中主要用配料被欧盟、美国、日本和韩国的风险预警,12起国内火锅底料和18起主要配料监督抽查不合格(2001年1月—2022年11月)的风险预警特征,分析发生原因。出口火锅底料有8种风险类型,其中被韩国通报16起,3种风险类型,以丙酸、脱氢乙酸居多;日本通报8起,2种风险类型,以甜蜜素居多;美国通报6起,4种风险类型,以产品污秽腐烂变质居多。831起火锅底料主要配料风险预警其风险类型较多、复杂。国内火锅底料防腐剂和重金属残留超标,防腐剂与出口火锅底料的种类不同,出口火锅底料和国内市场销售的火锅底料风险预警不同。国内火锅底料用配料的不合格与其出口的风险预警存在差异。火锅底料风险预警不是主要配料风险预警的叠加,系火锅底料特殊的加工工艺[火锅底料配料清洗(浸泡)、长时高温炒制或熬煮和预包装工艺]所致。 In order to provide scientific basis for exporting supervision and inspection,to promote the safe and high-quality development of hotpot seasonings industry,30 times of risk alerts of exported hotpot seasonings in our country reported by the Korea,Japan and USA,831 times of risk alerts in the main ingredients of exported in hotpot seasonings in our country reported by EU,USA,Japan and Korea,12 times of non-compliance report of hotpot seasonings and 18 times of non-compliance report in main ingredients of hotpot seasonings in supervision inspection in domestic market are comparative and analyzed systematic and comprehensively from China's technical trade measures network and foodmate network from January 2001 to November 2022 for discovering the risk characteristics and the cause of risks of hotpot seasonings.8 type of risk in hotpot seasoning exporting to Korea,Japan and the United States from china.16 times and 3 risk types of hotpot seasonings exported from China were alerted by Korea,risks type are mainly propionic acid and dehydroacetic acid.8 times and 2 risk types of hotpot seasonings exported from China were alerted by Japan,risks type are mainly cyclamate.6 times and 4 risk types of hotpot seasonings exported from China were alerted by USA,risks type are mainly a filthy,putrid,or decomposed substance.Risk type of main ingredients related to hotpot seasonings exported from China is great quantity and complex in 831 times of risk alert.Food preservatives and heavy metal residues exceed the standard mostly reported in hotpot seasonings in domestic.There is obviously different in risk types of hotpot seasonings between exported and domestic.The type of preservatives is different to export hotpot seasonings,the risks of export and domestic hot pot seasonings are different.There is a difference between domestic market and export in ingredients for hot pot seasonings.The risk alert of the hot pot seasonings is not the superimposed effect to their main ingredients,the reason is special processing technology of th
